Tips for Baking with Cassava Flour:

- While it may be suggested to substitute a cup of cassava flour for a cup of gluten-free flour, keep in mind that cassava flour absorbs more water and is denser than other flours. You may need to use slightly less cassava flour than expected.

- Recipes that require large amounts of flour tend to bake faster on the outside while the inside may still be somewhat “doughy.”

- Cassava flour is quite dusty, so be mindful of this when using it like you would with all-purpose flour.

- Although not overpowering, cassava flour has a nutty flavor due to its root origin. Consider this when choosing a final taste for any baking project.

Directions

Step 1: 1 cup of flour needs about 1 cup pf water. Step 2: Carefully and slowly pour the flour into boiling water while vigorously mixing to avoid any lumps forming. Step 3: You will note that it rapidly thickens to a stiff consistency. Keep mingling and turning for 3-7 minutes. Step 4: Yummy!!! Serve hot. It can be served with beef, chicken stew, fish or fresh vegetables.
